Ingredients
- 2 cups grated carrot
- 1 1/2 cups plain flour
- 1 cup sugar
- 1/2 cup oil
- 3 eggs
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon bicarbonate soda
- 1/2 cup chopped pecans
- Zest of 1 orange
- Pinch of salt
Cream Cheese Frosting
- 250 g cream cheese, softened
- 2 tablespoons butter, softened
- 1 cup icing sugar
- Fresh orange zest
- A squeeze of orange juice, if needed
Method
- Preheat oven to 170°C and grease or line a cake tin.
- Whisk eggs, oil and sugar together until combined.
- Add grated carrot, orange zest and chopped pecans.
- In another bowl, mix flour, cinnamon, nutmeg, baking powder, bicarbonate soda and salt.
- Fold the dry ingredients into the wet mixture until just combined.
- Pour into the cake tin and bake until golden and cooked through.
- Cool completely before frosting.
- Beat cream cheese, butter, icing sugar and orange zest until smooth.
- Spread frosting over the cooled cake and finish with extra orange zest or pecans.
